Squash Casserole

Introduction

A rich and creamy casserole that is perfect for the holidays. Using fat free ingredients helps to lower the calories. A rich and creamy casserole that is perfect for the holidays. Using fat free ingredients helps to lower the calories.
Number of Servings: 15

Ingredients

    5 cups squash (approximately 5 summer squash)
    1 onion
    salt and pepper to taste
    2 eggs
    1 cup fat free half and half
    1 container light sour cream
    2 - 3 cups shredded cheddar cheese
    2 sleeves Ritz crackers (crushed)

Directions

Slice squash and onion then boil in a large pot until tender. Salt and pepper while boiling.

In a large bowl, mix eggs and half and half with a wire whisk.

Mix in sour cream and cheese.

Fold in squash and onion mixture. Salt and pepper again to taste.

Pour into a 9 x 13 baking dish.

Top with crushed Ritz crackers.

Bake for 30 minutes at 350 degrees. Serve warm!
