Vegetable Bread

Introduction

Make into bread or muffins. Great for a snack or breakfast. Make into bread or muffins. Great for a snack or breakfast.
Number of Servings: 24

Ingredients

    1 box Carrot Cake mix
    3/4 cup pumpkin
    2 zucchini, grated
    1 cup applesauce
    1/2 cup skim milk
    2 eggs
    1 packet instant oatmeal (apple cinnamon is best)

Directions

In a large mixing bowl, blend the dry cake mix, pumpkin, zucchini, and apple sauce. Add Milk, eggs, and oatmeal packet.

Pour into large bundt pan. (Or muffin pans-- makes 2 dozen).

Bake at 350 F for 35 minutes, or until an inserted knife comes out clean.

(Noted time is for bundt pan. If making muffins, bake at 350 for 18 minutes, or until knife comes out clean).

    Fantastic! So moist and yummy it doesn't taste "healthy" , and it was so easy to make! I made this as described, but didn't have any instant oatmeal so I used 1/2 cup of old fashioned oats and a healthy sprinkling of cinnamon. Baked in a 13" x 9" pan and the time worked out the same. - 5/27/13

    It does when you click on ingredients details it tells you nearl y 2 cups 1.92 cups. so 2 cups of grated zucchini - 6/14/09

    I used the carrot cake mix with shredded carrot and raisins. Very yummy!!! Will cut into serving size pieces and freeze to keep it's freshness. - 3/26/09

    The one negative comment is that zucchini come in lots of sizes. How about stating the amount of grated zucchine in cups instead? - 2/28/09

    My daughter couldn't get enough of it and she's an extremely picky eater. My son also loved it and he avoids most veggies like the plague. Only thing I found was that I needed to cook it considerably longer that listed here when I made it in muffin tins. - 9/4/07

    This looks like something I would like to make, but I'm surprised that the fiber content is that low. I guess it could be upped with a couple of additions like shredded carrots and old-fashioned oatmeal. - 6/14/09

    I haven't made this recipe, but one similar and I froze the excess muffins and they came out great. It is best to let them thaw out on their own, instead of the microwave. The centers stay frozen for a long time. - 2/26/09
