.5 cup frozen peas
2 egg whites (optional)
1 tsp sesame seeds (white or black)
.25 cup veg or chick stock
1/6 of a block extra firm tofu
2 tbsp chopped green onions
.75 cup long grain brown rice
salt and pepper to taste
In a non-stick pan on low heat scramble egg whites. Add frozen peas and cook until thawed. Turn heat on high and add tofu. Cook until browned on all edges. Add cooked rice. Use chicken stock spiratically to keep ingredients from sticking to the pan.
