Olive Oil, 1 1tsp
Onions, raw, 120 grams
Celery, raw, 120 grams
Carrots, raw, 120 grams
Butternut Squash, 450 grams
Swanson Chicken Broth 99% Fat Free, 4 cup
Water, tap, 1 cup
Quinoa 1/2 cup uncooked
4-6 Fresh Sage leaves minced very small
Add quinoa. Cover and let simmer another 20-30 minutes or until quinoa is fully cooked.
With a stick blender or in food processor, blend until soup is desired consistency. I like to leave some small pieces of squash and carrot to add a rustic feel. Top with sage leaves before serving
Each serving is approx 1 cup
