Introduction

Ingredients

4 8-inch whole wheat/fat free tortillas
2 cups of baby spinach (bagged)
1 cup frozen corn, thawed
1 cup canned black beans, rinsed/drained
.5 cup low fat cheddar cheese
2 cups thinly sliced cooked steak -OR-
2 cups of thinly sliced boneless skinless chicken breast
4 tbs BBQ sauce
Directions
Preheat oven to 400 degrees. Top each tortilla with even amounts of spinach, corn, beans, cheese and steak. Drizzle BBQ sauce over and wrap them up.
Heat through in baking dish lightly coated with cooking spray for 10 minutes or until lightly browned.

Very good [I didn't follow the recipe to a tee, though]. Instead of beef I used chicken, omitted the cheese, and instead of putting the corn and spinach in the tortillas without any heat to them, I mixed them in with the shredded chicken and cooked for about 10 min. b4 wrapping it all up & baking. - 5/1/09

I save some calories by using full size flatouts,only 90 calories. Also some tortillas I found full large size at 60 calories. Then I can have reduced sour cream. I like to add sweet peppers, red,yellow, even green. I usually skip the bbq sauce, don't care for it. Makes a very filling meal. - 6/14/12
