Potato Soup

Number of Servings: 6

Ingredients

    2 tbsp. margarine
    4 c. 1% milk
    1/2 tsp salt
    1 1/2 c. shredded cheddar
    1/4 c. flour
    2 c. peeled, diced potatoes
    1/2 tsp pepper
    4 slices cooked bacon, crumbled

Directions

1. Melt butter over low heat; add flour, stirring untils mooth.

2. Cook, stirring constantly, 1 minute until thickened and bubbly. Gradually stir in milk. Stir in potato, salt and pepper. Cook over medium heat, stirring frequently, 30 minutes or until thickened and potato is done.

3. Stir in 1 cup cheese; cook 5 minutes more. Serve with remaining cheese and bacon sprinkled on top of soup.

Makes 6 servings (1 cup each??)
