Ingredients

    1 ex-lg potato
    enough canola oil to fry in
    salt to taste

    cut potat to your favoite size of fry. heat oil to 350. soak potato in icy cold water after cutting. Pat with paper towel til verydry. Blanch ( light brown) potato in oil. remove to broil pan in a 400degree oven to drain. after about 5 min of draining remove and pat extra oil off. Place potato in freezer for about 5 to 10 min til very cool. Re heat oil back to 350 and fry potatoes til golden brown. place back in oven at 425 degree to drain for 5 to 10 min. Salt to taste.
