L.R. applesauce oatmeal muffins with flax




Number of Servings: 24

Ingredients

    1 cup old fashioned rolled oats
    1 cup oat bran
    2 cups 2% milk
    1 cup whole wheat flour
    1/2 cup ground flax seed
    1 cup brown sugar
    1-1/2 cup applesauce
    2 eggs
    2 tsp. baking powder
    1 tsp. baking soda
    1 tsp. salt
    2 tsp. cinnamon,
    1 tsp. ginger
    1 tsp. nutmeg
    1/2 tsp. cloves
    2/3 cup raisins, plumped in hot water and drained

Directions

Soak the oats & bran in milk for about one hour.
Preheat the oven to 400 degrees.
Spray muffin pans with cooking spray.
Combine the oat mixture with the applesauce and eggs and mix until combined.
In a separate bowl measure and mix flour, flax, sugar, baking powder, baking soda, salt 2 tsp. cinnamon, ginger, nutmeg, and cloves. Add to wet ingredients and mix just until combined. Stir in raisins. Do not overmix. Spoon muffin mixture into muffin pans. Bake for 20-25 minutes or until done. Makes 24 muffins.

  • I made this recipe and thought they tasted a little bland. Discovered there was a similar one with a little more cinnamon which might help, probably will make that one because it is an easy thing for breakfast. - 8/23/08

  • Hello! Coconut oil!!? This is a BAD fat!! - 7/14/08

    Do some research on it. It has a bad rap because it is the most saturated fat out there, but virgin coconut oil is the only fat that will not turn to trans fats when heated as for frying. It also helps heal your thyroid gland. I don't think I would be loosing weight at all without it!
