Put two cups of uncooked rice, frozen veggies, and I like to add Sunbird Chinese Rice seasoning (adds 10 calories per serving) into microwave safe casserole dish. Microwave according to Minute Rice instructions. Combine all ingredients after rice has rested 15 minutes. Makes six 1.5 cup servings.

I made something similar to this but used pork medalions insteadm and regular eggbeaters...yummy..one cup plus a side dish of steamed california blend veggies,,,very very full...lol - 2/24/09
