6 cups yams 1 cup unpacked brown sugar 4 tbsp butter 2 cups marshmallows
Peel and cut into bite size pieces appx 6 medium to large yams. Place into salted water and bring to a boil, cooking until yams tender. Drain water off, and add rest of ingredients to pan with yams and let brown sugar dissolve into butter mixture. Top with marshmallows and turn heat to low until marshmallows soften and become slightly larger. Makes appx 5 one cup servings.
