Turkey Minestrone Soup

Ingredients

    1 3/4c diced celery
    1 cup sliced sweet onion
    9 cups homemade turkey broth or low sodium chicken or vegetable broth
    6 ounces diced turkey breast
    1 tbsp olive oil
    1/2 ounce dehydrated shiitake mushrooms, rehydrated and diced
    1/4 cup dry pearled barley
    1 cup green beans (canned, no sodium)
    1 cup carrots (canned, no sodium)
    1/2 cup frozen early peas
    1 cup garbanzo beans
    1 tbsp chopped garlic
    1 tbsp oregano leaves

Directions

Heat up olive oil - add onions and celery and saute until limp. Add garlic and oregano. Add broth and rest of the ingredients. Let simmer for at least an hour, until barley is done. Makes 8 - 2cup servings
