Yummy wintertime treat!
Its important to use Pacific Naturals Chicken Broth, or use one with a comparable calorie count. Any brown rice or wild rice medley could be substituted.

Its important to use Pacific Naturals Chicken Broth, or use one with a comparable calorie count. Any brown rice or wild rice medley could be substituted.

Number of Servings: 8

Ingredients

    8 cups Pacific Natural Foods Natural Free Range Chicken Broth
    2 large chicken breasts (boneless, skinless)
    2 large carrots, thinly sliced
    2 large celery stalks, thinly sliced
    1 clove garlic
    1 cup Trader Joe's Brown Rice Medley
    1 Tb Olive Oil
    Salt, Pepper, Herbs to taste


Directions

Prepare Brown Rice Medley According to package directions.
While rice is simmering, cut chicken breasts into bite size cubes. Heat 1 1/2 ts olive oil in skillet, brown chicken breast in oil. Remove from pan. Add remainder of olive oil, when heated add 1 clove garlic (minced), then carrots. Saute for 2 minutes, add celery, saute until tender. Add chicken, vegetables and broth to cooked rice, simmer for 25 minutes, or until carrots are at desired tenderness. Season as desired.
