Chicken and Rice Casserole

Introduction

Mother-in-law's recipe. This is our dairy-free version of traditional chicken & rice casseroles, due to my daughter's dairy allergy. I like to add a bag of frozen peas, or even frozen broccoli for an Asian flavor. Mother-in-law's recipe. Number of Servings: 4

Ingredients

    1 cup white rice
    2 cans Campbell's Chicken Broth
    1 can Campbell's Beef Broth
    4 Chicken Thighs, boneless and skinless

Directions

Combine all in a baking dish. Bake covered at 425 degrees for at least 45 minutes, longer if needed to absorb liquid.

For those watching sodium intake, I recommend using low sodium broth.
