Chicken Cordon Bleu Bites

Introduction

I found this recipe on allrecipes.com entered by LFARAONE and it's wonderful. I changed the bread crumbs she had used to parmesan cheese to make this a low-carb recipe. Ingredients

    1 pound ground chicken breast
    1/4 cup cooked, diced ham
    1 egg
    1/2 cup parmesan cheese
    5 ounces swiss cheese, cut into 1/2" cubes

    canola oil for frying

Directions

Makes about 20 balls. Four balls/serving.

1. Preheat oven to 350 degrees.

2. Combine the chicken, ham and egg in a large bowl until well blended. Gradually add parmesan until the mixture loses it's stickiness and can be easily formed into balls.

3. Form the chicken around the cheese cubes forming 2" balls.

4. Heat canola oil (1/2") in deep skillet. Fry the balls until the outsides are golden brown, about 4 minutes - turning to reach all sides. Drain on paper towels.

5. Bake in preheated oven until cooked through and the cheese is soft, about 20 minutes.

6. I like them dipped in ranch dressing, my DH preferred BBQ sauce.
