Turkey Loaf Surprise!

Ingredients

1lbs Ground Turkey
2 Eggs egg whites
1 1/4 cup Fiber One Cereal Grinded into crumbs
1 tsp Grill Seasoning
1/4 c Skim Milk
1/4 c Onion and Pepper Mix (frozen)
1/2 c Chopped Onion
1/2 c Frozen Chopped Spinach
1 tblsp Garlic Powder
2 tsp Lea & Perrins, Worcestershire Sauce
Pam cooking spray
1/2 Ketchup
1/4 Mustard
Directions
Heat the Pam cooking spray in a small skillet over medium-high heat, add the onions and spinach and peppers and cook stirring occasionally until soft and dry, about 8 minutes.
Meanwhile process cereal until bread crumb consistancy.
Transfer the spinach onion and pepper mix to a food processor Pulse until everything is finely chopped and evenly mixed together.
Use a rubber spatula to transfer spinach mixture a bowl. Let cool slightly. Add the turkey, and remaining ingredients (reserving some ketchup and mustard if you wish to spread over the top of loaf) and stir everything together. Transfer meatloaf mixture to a 9 by 5-inch loaf pan (1 1/2 quarts) and bake 1 hour and 15 minutes at 350. Remove loaf from oven, let rest for 5 minutes.
Slice meatloaf and serve
