3 egg whites
1-1/4 cup packed brown sugar
2-1/2 cups unsweetened flacked coconut
1-1/2 cups gluten-free cornflakes cereal
1 tsp lemon extract or fresh lemon grated peel
Cover a cookie sheets with a cooking wrap or grease it lightly.
Combine the egg whites with the sugar into the blender and blend on a high speed until reaches a white and creamy consistency. Combine together the coconut, the cornflakes cereal and the lemon extract. Stir in the egg whites mixture. Stir well to combine.
Drop by a tbspfuls onto the cookie sheets. Bake about 15-18 minutes. Remove from the oven, allow to cool about 5 minutes and enjoy!
