Beef and Rice Stuffed Peppers

Introduction

Tired of the same old meatloaf? Stuff it in peppers for a fun, and delicous, change! Tired of the same old meatloaf? Stuff it in peppers for a fun, and delicous, change!
Number of Servings: 4

Ingredients

    4 large bell peppers
    1 lb ground beef, lean
    1 c. cooked brown rice
    1 tablespoon ketchup
    2 cloves of garlic, minced
    salt and pepper to taste

Directions

Preheat oven to 400 degrees.

1. Cut tops off of peppers and clean out the seeds and white membranes.

2. Place the peppers in a pot of boiling water and boil until somewhat soft. Then put the peppers in a cold plunge.

3. Combine the beef, rice, garlic, ketchup, and seasonings in a bowl. Mix it up very well. (I like to use my standing mixer for this step.)

4. Stuff the beef mixture into the cavities of the peppers. Feel free to stuff them to the brim, as it will shrink down somewhat in cooking. Place the pepper tops on top for a nice decoration.

5. Place the peppers in a covered baking dish (I use my Le Cruset) and bake for about 45 minutes or until the beef is fully cooked.
