1/4 tsp olive oil
1/2 fresh leeks , thinly sliced
45 gr. button mushrooms , brushed of dirt and thinly sliced
1/2 fresh tomatoes , chopped
1 tsp basil, dried
2/5 tsp dry mustard
1/2 cup low sodium vegetable broth
1/8 tsp salt
1/10 tsp black pepper
Cook for about 2 minutes, stirring constantly.
Stir in the mushrooms and tomatoes. Continue cooking, stirring constantly, until mixture comes to a simmer. Stir in tarragon and dry mustard.
Add broth and return mixture to a simmer. Cover, reduce heat to low, and let simmer for 15 minutes. Season with salt and pepper before serving.
