Mint Chocolate Fudge

Ingredients

    Chocolate Layer:
    3/4c Splenda
    1/3 cup FF Evaporated Milk
    1 Tbs light butther
    1/8 teaspoon salt
    1 cups miniature marshmallows
    3/4 cups Semi-Sweet Chocolate Morsels
    1/2 teaspoon vanilla extract

    Mint Layer:
    1/3 c. FF evaporated milk
    1 tbsp. light butter
    .75 c. splenda
    1/4 tsp. salt
    3/4 c. white chocolate chips
    1/2 tsp. peppermint extract
    1 c. miniature marshmallows

Directions

LINE baking pan with foil.
For chocolate layer:
COMBINE splenda, evaporated milk, butter and salt in medium, heavy-duty saucepan. Bring to a full rolling boil over medium heat, stirring constantly. Boil, stirring constantly, for 4 to 5 minutes. Remove from heat.

STIR in marshmallows, morsels, and vanilla extract. Stir vigorously for 1 minute or until marshmallows are melted. Pour into prepared baking pan; refrigerate for 2 hours or until firm.

For Mint Layer:
Combine milk, butter, splenda, and salt in saucepan over medium heat. Bring to a boil. Cook 4 to 5 minutes, stirring constantly. Remove from heat. Stir in peppermint extract, marshmallows, and chocolate chips. Stir until marshmallows melt and blend.Pour on top of cooled chocolate layer. Cool.

Lift from pan; remove foil. Cut into 24 pieces.
