Introduction

My effort to re-create the fried rice I loved while living in the SF Bay Area.

This dish only takes a few mins if you already have the rice and chicken cooked. I like to batch cook chicken and shred and freeze the extra, the same can be done with the rice.

This dish only takes a few mins if you already have the rice and chicken cooked. I like to batch cook chicken and shred and freeze the extra, the same can be done with the rice.

Number of Servings: 2

Ingredients

    *Brown Rice, long grain, 1 cup
    Baby Carrots, raw, 4 medium
    Peas, frozen, 0.25 cup
    Egg, fresh, 1 large
    Chicken Thigh, .25 thigh, bone and skin removed
    Sesame Oil, .25 1tsp
    *Canola Oil, 1 1tsp
    Scallions, raw, 1 large
    Soy sauce (shoyu), low sodium, 1 tbsp
    Ginger, ground, .25 tsp

Directions

Cook chicken in 1/2 the sesame oil and 1/2 the canola oil. Remove and set aside. scramble egg in same pan and set aside.
Chop all ingredients and warm carrots and peas in pan. Add the rest of the oil, rice, eggs, chicken and seasonings. toss and serve.
