Ingredients

1 2/3 cup split peas - I use a variety of colors
1/2 cup chopped onions
1/2 cup chopped carrots
2 cloves chopped garlic
1 1/2 cup chopped, cooked pork roast
1 1/3 cup chopped, peeled sweet potato
38 oz Low fat, low sodium chicken or turkey broth
2 cups water
Directions
You can cook the onions and garlic in a bit of butter if you want. Or, just dump everything into the pot at once.
I taste it as it cooks to see if it needs salt. Depending on how the meat was cooked that goes into it, I'll add up to 1 tsp of kosher salt.
Likewise, seasoning is not set in stone. I like basil and tarragon, so those always go in. Sometimes a little cooking sherry or worcestershire sauce is appropriate. There are no hard and fast rules for this soup - just clear out what's in the fridge and let it simmer until all the parts are cooked through.
