Introduction

Number of Servings: 8

Ingredients

    1 tbs olive oil
    4 slices prosciutto
    1 onion
    2 ribs celery
    2 garlic cloves
    medium zucchini
    bay leaf
    1 cup white canelli beans
    1 cup garbanzo beans
    salt and pepper
    3 c chicken stock
    1 cup small pasta
    1/2 lb. green beans
    10 oz. spinach
    1/4 c parmesan cheese
    basil or parsley to top


Directions

saute prosciutto in soup pan, add onion, celery, garlic, zucchini, bay leave, stir 5 minutes, add canelli and garbanzo beans, add stock, add pasta and green beans to pot for 8 minutes, add spinach and cheese and stir. spoon into bowls and top with fresh basil or parsley

  • My family LOVES this soup - it's very good, we often substitute bacon for the proscuitto - I make the pasta separately and add it at the end so it doesn't soak up all the liquid. - 10/11/10
