Ingredients

2 cups flour
1 cup brown sugar, packed
2 tsp baking soda
2 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp ginger
1/8 tsp allspice
2 cups grated zucchini
1 apple, peeled, cored and grated
3 eggs
1 cup applesauce, unsweetened
2 tsp vanilla
Directions
Mix the dry ingredients in a large bowl. Stir in the zucchini and apple. In another bowl beat the eggs, applesauce and vanilla. Mix the wet ingredients into the dry ingredients until moistened.
Bake at 350 F for 20 minutes - Makes 24 muffins
