Introduction

Maple, coconut and craisins lend their natural sweetness to this no sugar granola. Keeps well in a glass cookie jar for several weeks. Maple, coconut and craisins lend their natural sweetness to this no sugar granola. Keeps well in a glass cookie jar for several weeks.
Number of Servings: 21

Ingredients

    8 cups old fashioned oats
    1/2 cup hot water
    2 tsp vanilla extract
    1 cup spelt flour
    1 tsp salt
    1 cup grated coconut, unsweetened
    1/2 cup chopped almonds
    1/4 cup raw hulled sunflower seeds
    1 T sesame seeds
    1 tsp cinnamon
    1/2 cup maple syrup
    1 cup craisins

Directions

Pre-heat oven to 350F. Line a 12x20" jellyroll pan with parchment paper. Combine all the ingredients in order listed except the craisins. Spread evenly onto pan and bake at 350F for 30 minutes. Remove from the oven and stir the granola to even out the browning. Bake for another 30 minutes or until golden brown. Remove from the oven and stir in the craisins. Cool completely before storing.
