Potato Kugel, Petitechef's, family size

Number of Servings: 20

Ingredients

    12 lmedium potatoes, or a 5 lb bag
    1 large onion
    7 large eggs
    1 cup canola oil
    1 T salt
    1 tsp black pepper
    1/4 cup water

Directions

Pre-heat oven to 450F. Peel and grate the potatoes and onion. Working quckly to minimize oxidation of the grated potatoes, add the remaining ingredients. Do not over mix as this makes the kugel rubbery. Pour into a parchment lined 9x13x3" pan. Bake at 450F for 1 hour, lower temp to 350F and continue baking for another 30 minutes. Let cool slightly before cutting in. I serving is 1/24 of the kugel.
