Almond-Crusted French Toast

Ingredients

    1/3 cup ground flaxseed1/4 cup sliced almonds1 cup vanilla soy milk (such as Silk)1/2 cup egg substitute1 tablespoon maple syrup1/2 teaspoon ground cinnamon1/2 teaspoon vanilla extract2 large egg whites6 (1.5-ounce) slices whole wheat or whole-grain bread (such as Earth Grains)Cooking spray1 teaspoon butter, divided1 1/2 teaspoons sifted powdered sugar

Directions

Combine flaxseed and sliced almonds in a shallow dish. Combine milk and next 5 ingredients (through egg whites) in a medium bowl, stirring well with a whisk, and pour milk mixture into another shallow dish.

Working with 1 bread slice at a time, place bread slice into milk mixture, turning to coat both sides. Let bread stand in milk mixture 2 to 3 minutes. Remove bread slice from milk mixture; dredge 1 side of bread in flaxseed mixture, pressing gently to adhere. Repeat procedure with remaining bread slices, milk mixture, and flaxseed mixture.

Heat a large nonstick skillet over medium heat. Coat pan with cooking spray. Melt 1/2 teaspoon butter in pan; swirl to coat bottom of pan. Add 3 coated bread slices, coated sides down; cook 2 minutes on each side or until lightly browned. Repeat procedure with cooking spray, remaining butter, and remaining coated bread slices. Sprinkle powdered sugar evenly over toast.

Yield: 6 servings (serving size: 1 piece)

    This sounds very good. I plan to try it, perhaps this weekend. I did recalculate the nutrition info though-your ingredient details list does not include the amounts you used. I came up with 148.3 calories, 7.5g total fat, 82.9mg sodium, 14g carbs, 3.4g fiber, 5.4g sugar and 7.7g protein. - 1/9/09

    Of course it is good. It is full of fat and carbs! What French toast isn't good with butter and maple syrup and powdered sugar! I am surprised that this is listed as healthy. Besides cooking flax seeds negates all of the good stuff in them. Sorry to be negative but I was shocked by this recipe! - 11/27/08

    Thank you for submitting the updated ingredients calculations BRENABA ! For some reason I find that alot. I just as much as everyone else should really know what they are eating before they decide it is healthy for them. I have been looking closer now at my recipes to make sure the totals are right. - 6/15/09

    well..I think it looks prettty good, & I wil be trying it this weekend. I w/b making a few subs due to finances & what I have on hand..will use English Muffin Bread for the toast, reg eggs & 2% milk. I will purchase maple syrup for the recipe as BF will probably want to use it and I may too! - 1/8/09

  • Personally i won't make it "only" because i'm on Low Carbs But that's not what "everyone else is on" so WHY be so neg. some people on SP aren't even dieting! I make a Muffin in a Mug, Atkins, that has 400 calories and i feel everything in it is healthy. You may not, that's ok. SO WHY BE NEGATIVE? - 10/31/10

    I agree that many spark recipes are a dissappointment to me. I use weight watchers or other lo-cal breads when I make french toast. skim or 1% milk, etc... this could be trimmed down more.

    You can make other French toast reciepes that has a lot less calories and very good. this one is to high in calories.So look around there's is many out there. - 6/15/09

    I'm vegan, and I think using soy milk, egg substitute and flax doesn't make up for the extra calories from everything else. I'd use egg replacer for the whole thing and no sugar, plus I'd maybe use agave nectar instead of syrup. Low glycemic index. - 11/27/08

    Sounds good, but calories-to-serving size is hard to take.

    And adding syrup or bananas sauteed in cinnamon and butter really kicks this breakfast into the dessert category. (SP's link to this recipe suggested the toppings, I'm not making that up!)

  • Very flavorful. I don't like syrup, so this was a tasty alternative. The kids hated it though because of the unusual texture-but then they're picky so their opinion doesn't count. LOL - 3/15/07
