Introduction

Ingredients

    Chicken Thigh, 3 thigh, bone and skin removed
    *Hunt's Tomato Sauce, no salt added, 0.25 cup
    *Tomato products, Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano, 3 serving
    Onions, raw, 1 cup, chopped
    Shiitake Mushrooms, .5 cup pieces
    Garlic, 6 cloves
    Olive Oil, 1 1tsp
    Peppers, sweet, red, raw, sliced, 1 cup

Directions

Start with large stock pot, brown chicken in olive oil and remove from pan. Then saute all veggies for 5 mins, add back in chicken and tomatoes, season with italian seasonings and let simmer, add water as neccesary. When done, chicken should be tender and fall apart with fork. Serve with couscous, brown rice, or to save calories, serve over steamed veggies or alone.
