Busy Night Taco Soup

Introduction

Number of Servings: 8

Ingredients

    2 cans Swanson's Chicken Broth, 99%fat free
    1 can kidney beans (approx 15 oz)
    1 can corn (approx 15 oz)
    1 jar chunky salsa (I use Tostitos, hot)
    approx 2 cups shredded roast chicken breast (if you can get the pre-roasted chicken at your grocery store, that works perfectly)
    8 tbs low-fat sour cream or guacomole (optional)
    cilantro (optional)

Directions

Mix all ingredients except the sour cream in a large pot. Bring to a boil. Reduce to simmer and simmer uncovered until warmed through. About 15 minutes. Add salt, pepper and cilantro as desired. Top with 1 tbs sour cream per bowl. Makes 8 1-cup servings.
