Number of Servings: 12

Ingredients

    1 1/2 cup biscuit/baking mix
    1 tablespoon sugar
    3/4 cup milk (I used 1%milk)
    1/4 cup maple syrup
    4 whole eggs, fresh large
1 1/2 cups shredded Cheddar cheese
1/2 pound bacon, cooked and diced

Directions

In mixing bowl combine biscuit mix, sugar, milk, eggs, syrup, and 1/2 cup cheese. Mix well. Pour into greased 13x9x2 baking pan. Bake uncovered at 425 degrees for 10-15 min. or until toothpick inserted near center comes out clean. Sprinkle with bacon and remaining cheese then bake additional 3-5min. until cheese is melted. Serve with syrup if desired.

Makes around 12, 3in servings

We have made this recipe with crumbled sausage, it changes the nutritional value but it is still great either way. Enjoy.

Honestly, the picture of this recipe looks like there are sliced potatoes on the top. I was hoping to find a breakfast casserole that included potatoes. - 9/11/14

I fixed this today for breakfast. It was very easy to prepare. I did bake the bacon first in the oven. My whole family loved it. I think that next time I make this I will omit the sugar as the syrup adds enough sweetness to it. Thanks for sharing. - 1/25/09

I've made this recipe a couple of times and it came out great every time! For those needing this meal to be lower in calories, a few substitutes like turkey bacon, no calorie sugar, etc. and the calories will drop by nearly 50 calories a serving! - 7/31/12

  • This recipe was really good! I used turkey bacon because that's what we had in the house. I didn't add extra syrup, but my husband and our room mate both found it a bit dry, so they did. To quote our room mate, "IT'S LIKE AN OVERSIZED PANCAKE WITH CHEESE AND BACON AND HAPPINESS!" - 2/11/14

I cooked this recipe this morning with some substitutes like I made homemade bisquick using finely grind pretzels. I also added red peppers, onions and mushroom. Also used mozzarella cheese along with cheddar. I also exchange bacon with turkey sausage. It was oh so good. Thanks for this recipe - 9/8/13

  • This was delicious!!! My entire family ate this! My most picky eaters had seconds. I did double the recipe and I am glad I did as I don't think I would have liked how thin the single batch would have been. Only a little left over. Great meal for the winter snow we are having. Will make again. - 3/1/12

  • I would add more maple syrup and use more of a biscuit mix than the Jiffy baking mix that I used. I am going to do some tweeking and try it again. - 8/10/11

  • My entire family loved this recipe. It was quick and easy to make and tasty. I cooked the bacon while baking the remainder of the ingredients. A great recipe to put together before heading out the door to church. Second helpings had by all. I used Splenda instead of the sugar. - 2/14/10
