Stuffed Mushrooms Lite

Ingredients

    12 fresh, whole mushrooms (one package)
    1/4 cup onion, chopped
    1 tsp olive oil
    1/4 cup seasoned bread crumbs
    2 tbsp Parmesan cheese, shredded

Directions

Preheat oven to 400.

Remove stems from mushrooms. Chop onions and mushrooms stems. Saute mushroom stems and onions in a small pan with olive oil over medium-high heat. Salt and pepper to taste. Add a few tbsp of water to pan. Cook vegetables until soft, about 5 min. Add bread crumbs to pan, stir mixture well. If too dry, add a bit more water. Stir in 1 tbsp Parmesan into bread crumb/vegetable mixture. This is your filling.

Place mushrooms on a non-stick pan. Fill each mushroom with filling. Top filled mushrooms with remaining 1 tbsp Parmesan.

Bake for about 20 min., or until cooked and cheese is melted.
