Pfeffernusse (peppernuts)
Submitted by: MEL_UNRAUIntroduction
These are a traditional Mennonite Christmas cookie. This is my grandmother's recipe and they are the best peppernuts I have EVER had. They put all other peppernuts to shame! They are an investment in time, because they take 2 days to make, but well worth it, if you like anise. These are dark, crunchy, and sweet! These are a traditional Mennonite Christmas cookie. Ingredients
-
Granulated Sugar, 2 cup
Butter, unsalted, 1 cup
Shortening 3/4 cup
Molasses, 1 cup
Milk, 1/2 cup
Baking Soda, 1 tsp
cadamom, 1 tsp
cinnamon, 1 tsp
Cloves, ground, 1 tsp
Nutmeg, ground, 1 tsp
Allspice, .5 tsp
oil of anise, .5 tsp
black pepper (fine grind), 1/8 tsp
Flour, white, 6 cup
Directions
Cream sugar, butter, and shortening together. Add molasses and milk. Mix then add all spices. Stir in flour. Cover and refrigerate overningt. Form dough into 5/8 inch ropes. Place ropes on a large cookie sheet with waxed paper and chill over night again. Cut cookies into bite size pieces and place on cookie sheet. Bake at 375 for about 7-8 minutes. Scrape into a large bowl to cool. Once cooled, store in an airtight container. Do not freeze for storage, they will go soggy. These can actually keep for about a year in a tin. I have guess-timated the serving size at about 15 cookies with the recipe making about 700 small cookies.
