Quinoa Primavera

Ingredients

    1c uncooked quinoa
    1c zucchini chopped
    1c yellow squash chopped
    1c carrots chopped
    1c red bell pepper chopped
    1 1/2c leeks
    4 tsp grapseed oil
    8tbsp parmesean cheese
    salt & pepper to taste

Directions

Makes 4 2c servings

Cook quinoa according to package instructions. While it is cooking chop zucchini, squash, carrots, leeks and bell pepper. Saute leeks with grapeseed oil in 4qt saute pan on medium heat until they soften. Add remaining vegetables and cook 10 minutes. Season with salt and pepper to taste. Add cooked quinoa to saute pan and cook 5 minutes more. Serve immediately and grate 2tbsp parmesean cheese over each serving.
