Vegetarian tostada with himemade quacamole

Introduction

For your mexican cravings!! Homemade quac is the best!!! For your mexican cravings!! Homemade quac is the best!!!
Number of Servings: 1

Ingredients

    1 stone ground corn tortilla
    1/3 cup black beans (pureed and canned)
    1/3 cup chopped tomato
    1/3 cup lettuce
    1 oz. mozzerella part-skim

    For Quacamole:
    1 ripe avocado
    1 teaspoon cooked chopped tomato
    0.5 fresh lime
    salt and pepper

Directions

Place beans on top of tortilla, followed by tomatoes, lettuce, and cheese. Bake in oven at 350 for 10 minutes.
To make guacamole, peel and put meat of avocado in bowl, squeeze the lime juice into the bowl with the avocado, spoon in tomato. Salt and pepper to taste.
