Vegan Curry Burgers

Introduction

These vegan patties are easy to make and the Indian spices give them a pleasingly exotic taste. For added heat, substitute the black pepper with chili powder. Ingredients

    2 T olive oil
    1 med onion, chopped
    1 tsp ground coriander
    1 tsp curry powder
    1 tsp fennel seeds
    1 1/2 Cup mushrooms, chopped
    1 1/2 Cup cooked and drained chickpeas
    4 med carrots, grated
    1/4 Cup walnuts, chopped
    3 Tbs cilantro, chopped
    1/2 tsp salt
    1/4 tsp black pepper

Directions

1. Heat 1 Tbs oil in a frying pan and saute onions over medium heat, stirring frequently, for about 2 minutes. Add coriander, curry and fennel, and cook for 3 more minutes. Add mushrooms and continue cooking and stirring for about 5 more minutes.
2. Transfer to a food processor and add the chickpeas. Process in bursts until well chopped - take care not to over-process, as you want the mixture to be crumbly, not pureed.
3. Transfer the mixture to a bowl and add remaining ingredients.
4. Lightly flour your hands and shape the mixture into five patties.
5. Fry in 1 Tbs oil over medium heat - 4 minutes per side or until golden brown.
