Taco Casserole

Number of Servings: 6

Ingredients

    1 large onion, diced
    2 garlic cloves, thinly sliced or grated
    3/4 c water
    1 bunch scallions, white parts only, thinly sliced
    1 lb ground pork, chicken or turkey
    1 tsp ground cumin
    1 tsp chili powder
    1/2 tsp cayenne pepper
    1-15 oz can fat-free refried beans
    1-14.5 oz can tomatoes w/peppers
    4 oz sharp cheddar cheese, shreded
    1/2 head iceberg lettuce, cut into thin strips

Directions

preheat oven to 350
place onion, garlic and 1/4 c water in pan, cook covered stirring occasionally until softened
add water to keep from burning
add scallions and cook until softened
add ground meat, cumin, chili powder and cayenne
cook until meat is done
add remaining water and beans
stir to combine and spread in a 9x13 baking pan
pour tomatoes and their juice over the bean mixture and top with the cheese
bake until golden brown (about 25 minutes)
sprinkle with lettuce
