Cheesy Carrot Potato Soup

Ingredients

    3 tbsp butter
    2 tbsp flour
    2 cup low sodium vegetable stock
    3/4 cup half and half cream
    2 large carrots, grated
    1 sweet potato, cubed
    2 cups shredded cheddar cheese

Directions

Melt butter in saucepan, combine with flour. Add vegetable stock, carrot, and sweet potato. Simmer until thickens. Remove from heat, add half and half cream and cheese. Stir until melted. Enjoy!
