4 bone in chicken breasts (roasted) + juices
2 cans diced tomatoes
1 can diced tomatoes with chilis
1 can black beans rinsed and drained
1 can kidney beans rinsed and drained
1 tbs evoo
1 can tomato paste
emeril's southwest seasoning to taste
shred chicken and discard skin and bones.
in a large stock pot heat evoo. saute garlic and add chicken.
add all other ingredients and simmer until hot.
