Gingerbread Squares

    1 1/4 cups sugar
    1/2 cup butter
    2 eggs
    2 1/2 cups all-purpose flour
    2 1/2 teaspoons baking powder
    2 teaspoons ginger
    1 teaspoon cinnamon
    1/2 teaspoon salt
    1/4 teaspoon ground cloves
    1 cup milk
    Confectioners' sugar


1. Preheat oven to 375 degrees. Grease a 13 x 9-inch baking pan.

2. Beat sugar and butter in a large bowl on medium speed until light and fluffy, about 5 minutes. Beat in eggs, one at a time, until combined. Add flour, powder, salt, ginger, cinnamon, and cloves; pour milk over mixture and beat just until smooth.

3. Pour batter into pan. Bake until toothpick inserted in center comes out clean, about 30 minutes. Transfer pan to wire rack to cool slightly or until ready to serve.

4. Before serving, dust with confectioners' sugar; cut into 12 squares. Serve warm or at room temperature.

For a special occasion, bake this in two 8-inch round pans and frost with cream cheese frosting.
