Loaded Potato Casserole

Introduction

I really love loaded baked potatoes so I thought I would try to find a healthy, easy, different way to serve I really love loaded baked potatoes so I thought I would try to find a healthy, easy, different way to serve
Number of Servings: 6

Ingredients

    1.5 lbs. Baby Red Skin Potato
    1 Cup Kraft Free Cheddar Cheese
    1 Cup Fat Free Sour Cream
    1/2 Cup Chicken Broth
    Scallions Chopped
    Bacos Bacon Bits

Directions

Cut Potatoes into small pieces (either 1/2 or 1/4 depending on the size of the potato)
Boil them until just beginning to turn soft (watch these closely as you don't want to end up with mush)
Drain potatoes and place in a casserole dish
combine the Sour Cream and the Chicken Broth and then pour over the potatoes. (if this is still too thick for your liking, add more broth - but factor it in. Should be soupy so it covers the potatoes nicely)
Add the shredded cheese and Bacos and stir.
Place in the oven on 375degrees for 1/2 hour to 45 mins depending on how done you want them.

After I remove them, I place chopped scallions on the table for people to use as they wish.
