Pork & Cabbage Stir Fry

Introduction

This was a kitchen oops that turned out okay. I got the bright idea to make asian style cabbage rolls (think eggrolls in cabbage leaves instead of the wonderful crispy wantons) and then I discovered there must be a gift to wrapping food in a leaf and God did not bestow that gift upon me. Ingredients

    1.5 pounds of pork tenderloin with all visible fat trimmed
    .5 large head of cabbage finely chopped
    3 large carrots juilenned
    3 shallots chopped
    3 stalks of celery juilenned
    1 tbsp Olive Oil
    3 tbs Lite Soy Sauce

Directions

Trim and slice pork into thin strips and cook in the oil until cooked through. Add the chopped and sliced vegetables and the soy sauce and cook until your desired tenderness.

Good served over whole grain brown rice or alone.
