Introduction

Microwave the potatoes to make this much quicker to cook than the usual hour and a half it normally takes to make scalloped potatoes. Use 2% cheese to make it lower fat. Ingredients

    2 lbs potatoes
    Campbells Cheddar Cheese Soup~ Condensed, 1.25 cup
    Fat free half and half, 1.5 cup
    Onions, dehydrated flakes, 2 tbsp
    Garlic powder, 1 tbsp
    Cheddar Cheese, 2 cup, shredded

Directions

Microwave Potatoes until tender
Slice into 1/4 inch slices
Arrange slices into a 13x9 baking dish
Mix together Soup, half and half, onion, and garlic
Pour soup mixture over potatoes, making sure to cover completely
Sprinkle cheddar cheese over the cassarole
Bake about 30 minutes on 350 degrees or until soup is bubbly and cheese is melted and starting to brown
