Simple Mushroom SoupSubmitted by: ANGELLYBELLY
1 onion chopped up
2 tbsp olive oil
2 containers of mushrooms (blue 8 oz containers)
3-4 cups of imagine soup broth (I chose mushroom and vegetable.)
1 container of canned mushrooms
Chop up mushrooms and add those.
(At this point you can add fresh spinach or zuchhini)
Sautee until shriveled up and reduced by more than half in size. (2 containers will shrink A LOT!)
Add soup broth.
Season with Thyme and a little Salt (salt may not be necesary depending on the kind of soup broth you add. So taste first!)
Reduce flame and let it thicken.
I like to puree this with a hand blender and then add a can of mushrooms for "bits and pieces" in the soup.
