240 Calorie Mushroom Rice

Introduction

Simple, easy and really nothing special or unique, its just brown rice with roasted mushrooms mixed in. Simple, easy and really nothing special or unique, its just brown rice with roasted mushrooms mixed in.
Number of Servings: 1

Ingredients

    60g (1/3 cup) raw brown rice
    100g fresh mushrooms, cleaned & sliced
    1/8 teaspoon salt
    7/8 cup water

Directions

1. In a small pot, add salt, raw rice and the water that has been heated.
2. Once it comes up to a boil, cover immediately and lower temperature to medium low heat.
3. Cook for 30 minutes, without peeking.
4. In the meantime, prepare mushrooms by roasting them on a baking sheet covered with parchment paper. A little salt sprinkled on to dry them out a bit, 350° oven, for about 15 minutes.
5. Combine the two and eat.

Makes around one cup of rice, which is one serving.
