Huevos Rancheros

Introduction

The Ranchero Sauce is a seperate recipe. Make the sauce, chop the veggies and store in sealable containers to make breakfast a snap. Don't be discouraged by the calorie count, with this recipe and the Ranchero Sauce recipe the total calories are 355.4, but remember... That includes all condiments such as sour cream and corn tortillas and is made with a whole egg. Just keep in mind that this is a complete meal. Not necessary to add anything to the meal. Ingredients

    1/2 T. buttery spread
    2 T. onion, diced
    2 T. green bell pepper, diced
    2 T. tomato, seeded and diced
    Salt to taste
    1/2 c. Ranchero Sauce
    1 T. Hot Sauce
    1 Egg (scrambled egg substitute or egg whites can be used also.)
    2 corn tortillas, 6-inch
    1 T. Reduced-Fat Sour Cream

Directions

In a skillet melt the buttery spread. Add onions and bell peppers and sweat about 5 min. Add tomatoes and salt, cook another 2 min. Stir in Ranchero sauce and hot sauce and bring to a simmer, about 3-4 min. Crack egg into the simmering sauce and let cook to desired hardness. Warm tortillas over flames of a gas stove or in the oven wraped in foil. Place one tortilla in the center of the plate and pour egg and sauce over the tortilla. Top with sour cream and serve with other tortilla.
