The Best Turkey Zucchini Meatloaf

Ingredients

    • Zucchini, 1.25 cup,shredded
    • Carrots, raw, 1/2 cup, shredded
    • Onions, raw, 1/3 cup, chopped
    • Red Tomatoes, 1/3 cup, chopped
    • Onion powder, 1 tsp
    • Pepper, black, .1/2 tsp
    • Liquid egg substitute,(Egg Beaters), 0.5 cup
    • Seasoned Bread Crumbs 1/2 cup
    • Ground turkey, 93% lean, 16 oz
    • Worcestershire Sauce, 3 tsp
    • Parmesan Cheese (Parmigiano Reggiano), grated, 1/4 cup

Directions

Preheat Oven to 350 degrees

In large bowl combine shredded zucchini, shredded carrots, finely chopped onions, diced tomatoes, pepper, onion powder, egg substitute and mix.

Add the Breadcrumbs and mix.

Add Ground turkey and worcesterchire sauce and mix.

Finally, add 1/4cup parmigiano reggiano and mix.

Put mixture into ungreased 2qt (11 x 7.5 pan) baking pan. Be careful to pull mixture away from the edges of the pan, leaving about 1/2 inch of space between the meat and the pan for juices.

Bake for 30 minutes or until cooked through.

Makes 6 5oz servings.

TIPS:
- Sprinkle 1/2 cup of shredded cheddar or mozarella cheese on top of the meatloaf when there is about 5 minutes left to bake (just for melting).

- Top with Fat Free brown gravy or tomato sauce

- Mix and match any veggies you want such as mushrooms, asparagus and spinach

- GREAT in a sandwich the next day for lunch
