Directions

Combine flour baking powder and baking soda. Set aside.
Beat butter, anise, vanilla, lemon zest, salt and sugar until light and fluffy ... add eggs one at a time mixing well after each. Slowly add flour mixture until blended but still chunky. Stir in pistachios and craisins..
With lightly buttered hands, mix all ingredients with hands until well blended. Form a large log and divide in half. Divide first log into 3 equal parts. Roll each into 8" log and place on cookie sheet. Flatten to approx 8" x2". bake at 325 for 25 minutes. Remove from oven and carefully angle cut each into approx.10 pieces ... reduce oven temp to 275 and bake for 40 minutes. Remove and repeat for other 1/2 of the dough.
Makes 6 nice sections approx 10 pieces each.

Thanks for your comments on biscotti ...
Here's an idea for a change to this recipe ... take out almonds and orange zest ... add 1 tsp vanilla, 1 cup craisins and 1 cup pistachios for a delicious alternative.
