Ingredients

1 3/4 cup white flour
1 3/4 cup whole wheat flour
1 cup unsweetened apple sauce
1/2 cup sugar
3/4 cup brown sugar
1 egg
1 tsp cinnamon
1 tsp nutmeg
2 tsp ginger
1/2 cup molasses
1 1/2 tsp baking soda
about 3/4 cup for rolling/cutting
Directions
Cream apple sauce and both sugars in kitchen mixer. Add egg, molasses and spices. Mix in both flours slowly.
Chill dough for at least one hour (overnight is better).
Preheat oven to 350Ëš
Roll out dough on WELL FLOURED parchment to about 1/4- 1/8 inch thick and cut cookies. Cookies will rise when you bake them!
Bake 10-12 minutes on lightly greased cookie sheet.
Makes 45 (3 inch) gingerbread men.
