Introduction

A nice combination of spicy, sweet and savoury tastes with a wonderful texture. A nice combination of spicy, sweet and savoury tastes with a wonderful texture.
Number of Servings: 4

Ingredients

    1 cup Couscous (dry),
    1/2 cup Cucumber (with peel), sliced and quartered
    1/2 cup Yellow Pepper, chopped
    2 Green Onions, sliced
    1/2 small red onion, sliced
    1/2 red chili pepper, deseeded and sliced thin
    1/2 cup Pomegranate Seeds
    1/2 cup Mango, chopped
    1/4 cup Basil, chopped
    1/4 cup Parsley, chopped
    2 T Olive Oil
    Balsamic Vinegar, to taste
    Salt and Pepper

    Serve chilled, or at room temperature.

    Makes 4 generous servings.

  • I substituted banana peppers for the chili peppers and I took out the green onions, basil, parsley, pomegrante. Then i substituted the red onion for a yellow onion and it was absolutely delicious! I think it would have been fine the other way too but my family has a lot of picky eaters. - 1/28/09
