IntroductionThis recepie is a very much loved one in our wider family. My inlaws are completly unable to cook anything without spices, and this was the creation they came up with. This recepie is a very much loved one in our wider family. My inlaws are completly unable to cook anything without spices, and this was the creation they came up with.
Pasta (aprox 850g cooked)
3 cans of tuna in spring water
1 cup of sweetcorn
1 large onion
2 tbsp olive oil
chopped coriander (preferably fresh).
1/2 tsp tumeric
1/2-1 tsp chili powder (to taste)
1 tsp salt
cook your pasta in plain water - until al dante.
1- chop the onion into small pieces. Add to a pan on a high temperature with the olive oil and salt.
2- once sizzling, turn down the heat to a medium heat, stir and cover. cook until the onions turn translucent and slightly brown in colour. Careful not to let it burn.
3- add the spices and stir. cook for a further 2-5 minutes until the oil starts to separate from the onion.
4 - add the tuna, sweetcorn and coriander. Mix well until the spices have combined completely with the tuna.
5 - Add to the drained pasta. Mix well. Serve.
we normally eat this with a salad and a little bit of ketchup. A nice simple but wholesome lunch.
