Breakfast Muffins

Number of Servings: 10

Ingredients

    1 tube of biscuits, homestyle or buttermilk, not grands
    8 eggs, stirred
    8 oz frozen spinache
    5/8 cup of cheese

Directions

Use pan spray on a muffin tin. Put 1 biscuit in each muffin space and press it 3/4 the way up the sides . Heat spinache in microwave until hot. Spoon hot spinache into muffin tins. Pour eggs on top. Sprinkle cheese on top of eggs. Bake in a 350 degree oven for 20-25 minutes. Cool 5 minutes and serve. Makes 10 servings.
